Salad as a Meal Challenge: The Beginning

If you are a long time reader of this site, you know how much I dislike salads (or what I fondly refer to as rabbit food). So when I got an email from William Morrow Publishing asking me if I wanted to participate in a month long challenge where I would replace regular meals with salad creations from Patricia Wells’ soon to be released cookbook (aptly titled) Salad as a Meal, I was like “heck to the no!” and deleted that note ASAP.

BUT, as luck would have it, during one rainy weekend afternoon that kept me prisoner in my apartment, I decided to peruse the pages of Patricia’s book (my cable and internet were down – so I really had nothing better to do). As I perused the pages of lush greens, I actually saw more than a few recipes that looked, dare I say…interesting and possibly tasty! And so I relented, undeleted that email from my Trash email section, and decided to take on this challenge (plus, as an added bonus, I figured this would be a great way for me to tackle my “start cooking more at home” New Years resolution).

In the next few weeks, look out for post and photos on my adventures from cooking and eating from Salad as a Meal -- and maybe even a few sneak peak recipes from the book! Wish me luck (with my novice cooking skills – I’ll need it) and stay tuned!
