Lunch on the Run: Chicken Marsala Chopped Salad

Now that the weather outside is frightful and the fire inside is so delightful, I've been spending more time in the kitchen experimenting with new recipes ideas. My goal: to create easy to make, tasty but still healthy meals that you can prepare the night before and take to work the next day. This weeks "Lunch on the Run" idea is the Chicken Marsala Chopped Salad. Five minutes and you got yourself a high protein and low carb meal that will keep you satisfied until dinner.

Chicken Marsala Chopped Salad
Servings: 1
Calories: 550
Protein: 31g

*1/2 package of Dole Bacon & Bleu Salad Kit (200 calories, 6g protein)
*1 piece Cuisine Solutions Chicken Marsala frozen chicken breast (200 calories, 24g protein)
*1/4 cup tortilla strips, for garnishing (100 calories, 1g protein)
*Dash of Bertolli Extra Light Olive Oil, for sauteing 50 calories)
*Salt and Splenda, to taste

1. Heat Bertolli Extra Light Olive Oi in non-stick skillet till hot. Add 1/2 package of the Dole Bacon & Bleu Salad Kit (leave dressing packet out) and a dash of salt and Splenda and saute until cooked. I like Dole's all-natural chopped salad kits since it not only has layers of flavor, texture, color and crunch in every bite, but it's also super convenient. They have a whole line of flavors but I like the Bacon and Bleu kit for its Applewood smoked bacon, crunchy green and red cabbage, crisp Romaine, kale, sweet carrots, and green onions. You can eat this straight from the package, but I prefer my veggies cooked.

2. Place Cuisine Solutions Chicken Marsala frozen chicken breast in a separate bowl and microwave on HIGH for 5 minutes. I like Cuisine Solutions' Chicken Marsala because its frozen that doesn't taste like frozen. That's because they cook their restaurant-quality products Sous-vide style. French for “under-vacuum”, this innovative cooking technique in which food is vacuum sealed and slow-cooked in water at constant low temperatures until it’s perfectly cooked through to maintain flavor and consistency - even when refrozen.

3. Put (cooked) chopped salad in a bowl, add chicken breast and top with tortilla strips.

4. ENJOY! (or place in Tupperware and enjoy the next day for lunch)
