Keep Cool Over the Summer with Homemade Ice Lollies!

For most of us, it’s the time of year when we tend to get a bit hot and bothered in the sunshine. There’s nothing better than cooling down in the summer heat, with a nice ice lolly or ice cream. Ice lollies can be a great and tempting snack on the way back from work or as a treat for your kids after school. We’ve come up with a recipe to combine healthy, delicious treats by making homemade yogurty ice lollies.

For this recipe, you’ll need the following ingredients:
• Ice lolly moulds
• Ice lolly sticks
• 450g of Greek-style honey yogurt
• 125g of strawberries
• 4 kiwis, halved and flesh scooped out
• 1 medium mango with all the flesh removed
• The juice of half a lemon
• 4 tablespoons of sifted icing sugar

The recipe will make around 12-16 lollies, depending on the size of the lolly moulds. The method is also pretty easy, so it won’t make you hot under the collar and you won’t need to worry about taking out restaurant insurance!

Firstly, blend up the strawberries in a blender with 1 and a half tablespoons of icing sugar and half a tablespoon of lemon juice to a puree. Over a bowl, put the mixture into a sieve and using the back of a ladle, push the puree through the sieve, to discard the seeds. Put the mixture into a bowl and leave it to the side.
Next, place the mango in the blender with just 1 tablespoon of icing sugar and 1 tablespoon of lemon juice. Sieve into a bowl and leave this to one side.

Do the same with the kiwi with 1 and a half tablespoon of icing sugar but with no lemon juice, it will be sour enough. Taste the kiwi, and add more sugar for taste. You don’t need to sieve the kiwi puree.

Now for the fun part! Spoon a layer of fruit puree into the lolly moulds and then add the first layer of yoghurt. Then add another layer of fruit puree and a final layer of yogurt. Insert a lolly stick into each lolly and freeze over night. You could also experiment with this recipe and use other fruits e.g. oranges and raspberries. Cool yourself down by making some fabulous lollies over the summer!
