Psudo-Homemade Gourmet: Lamb Shank Pasta Zero Dinner

By: Finance Foodie

Since the Mister works rather long hours, I know he likes to come home to an already prepared homemade meal to end the day (as they say, the way to a man's heart is through his stomach). But living in NYC and also having a full time job doesn't leave me much time to slave away over a hot stove. So what's my solution to this dilemma? A delicious "psuedo" homemade dinner that tastes like it took 20 hours to prepare, but really took about 20 minutes. So ladies, put those pots and pans and measuring spoons away, the Lamb Shank Pasta Zero Dinner is here to save the day.

Servings: 2
Calories per serving: 305
Protein grams per serving: 36
Prep time: 20 minutes

*1 box Cuisine Solution Frozen Lamb Shank (210 cal, 30g protein)
*1 bag Green Giant Valley Fresh Sugar Snap Peas Frozen Steamers (80 cal, 5g protein)
*1 bag Nasoya Pasta Zero Plus Shirataki Fettuccine (15 cal, 1g protein)

1. Heat Green Giant Valley Fresh Sugar Snap Peas Steamers bag in microwave on HIGH for 5 minutes. Let it stand for one minute. I like using Green Giant's Vegetable Steamers because it provides the convenience of steaming right in the microwave  - and the veggies come out fresh looking, delicious and nutritious! I used the Sugar Snap Peas as a side add on but there are so many quick and yummy recipes you can use these veggies in (some already tried and true ones include the Cheesy Broccoli Puffs with Sriracha Sauce, Turkey and Veggie Alfredo Pot PieGarden Vegetables with Lemon-Scented Quinoa, Broccoli and Artichoke Party Dip and Roasted Potato and Sausage Quiche).

2. Wash and drain Nasoya Pasta Zero Plus Shirataki Fettuccine in a colander. Heat on stovetop in a teflon pan until dry.  Add a dash of Splenda and salt to taste. I use Nasoya Pasta Zero noodles because they have a similar consistency to a noodle but it'll save you about 200 calories versus a serving of regular pasta. And for most people who spend a good chunk of the workday sitting by the computer, that's calorific savings you can bank.

3. Heat oven to 375°F. Take Cuisine Solution Frozen Lamb Shanks out of the plastic bag and place in oven safe pan. Heat for 40 minutes. Or if you are pressed for time, heat in the microwave on HIGH for 10 minutes. I'm a big fan of Cuisine Solution's frozen entrees because they're definitely not your run of the mill TV diner - all the dishes taste like a restaurant chef prepared it for you fresh in your kitchen.

4. To serve: place Pasta Zero noodles in shallow serving bowl. Add Sugar Snap Peas to sides and place Lamb Shank in middle. Drizzle Lamb Shank Sauce over entire dish and ENJOY!
